One-Pan Creamy Boursin Cheese Pasta with Burst Cherry Tomatoes

This is the pasta for nights when you don’t want to stand at the stove. A wheel of garlic-and-herb Boursin roasts with sweet cherry tomatoes until the tomatoes burst and the cheese turns soft and golden. Mash it all together and you have a silky, creamy tomato sauce with almost no effort.

Why You’ll Love It

  • Five main ingredients and a baking dish.
  • Hands-off: the oven does the work while the pasta boils.
  • Creamy without cream: Boursin melts into a rich, herby sauce.

Tips

Use pasta water. The starch in it helps the cheese and tomato juices come together into a glossy sauce instead of a clumpy one.

Pick a pasta with ridges or tubes. Rigatoni and cavatappi hold on to the chunky sauce.

Roast until the tomatoes collapse. Burst, slightly blistered tomatoes give the sweetest, deepest flavor.

Serving Suggestions

Serve with a crisp green salad, garlic bread, or grilled chicken.

Storage

Refrigerate leftovers up to 3 days. The sauce thickens when cold, so add a splash of water when reheating.

Ingredients

Instructions

  1. Heat the oven. Preheat the oven to 400°F (200°C).
  2. Prepare the pan. Add the tomatoes and smashed garlic to a 9x13-inch baking dish. Drizzle with the olive oil, sprinkle with salt, pepper and red pepper flakes and toss to coat. Nestle the Boursin in the center.
  3. Roast. Bake for 30 to 35 minutes, until the tomatoes have burst and the cheese is soft and lightly golden.
  4. Cook the pasta. While it roasts, cook the pasta in well-salted boiling water until al dente. Save 1/2 cup of the pasta water, then drain.
  5. Make the sauce. Take the dish out of the oven and mash the Boursin, garlic and tomatoes together with a fork until creamy. Add the pasta and a splash of the pasta water and toss, adding more water until the sauce coats every piece.
  6. Serve. Stir in the basil, taste for salt and serve right away with parmesan if you like.

Notes

  • Any Boursin flavor works. Shallot & Chive or Pepper are both great.
  • Add protein by tossing in cooked shredded chicken or shrimp with the pasta.
  • Stir in 2 handfuls of baby spinach with the hot pasta and it will wilt into the sauce.

Frequently Asked Questions

Can I use cream cheese instead of Boursin?

Yes. Use 5 oz cream cheese with 1 teaspoon garlic powder and 1 teaspoon dried Italian herbs mixed in.

Can I use big tomatoes?

Cherry tomatoes burst and get jammy. For large tomatoes, chop them into 1-inch pieces and roast a few minutes longer.

How do I keep leftovers creamy?

Reheat with a splash of water or milk over low heat, stirring until the sauce loosens.
