How to Make Melt-in-Your-Mouth Chicken Breast at Home
Juicy, tender chicken breast every time: a quick brine, a creamy sour cream parmesan topping and a crispy panko crust. Ready in 35 minutes.

Dry, stringy chicken breast is the most common weeknight disappointment. This method fixes it with three simple tricks: a quick 15-minute brine, thin even cutlets, and a creamy parmesan topping that protects the meat while a buttery panko crust gets crispy on top.
The Three Secrets
1. A quick brine. Salt water seasons the chicken all the way through and helps it stay juicy. Fifteen minutes is enough to make a difference.
2. Even thickness. Butterflying or pounding the breasts means no dry ends and no undercooked centers.
3. High heat, short time. At 400°F the cutlets cook through in about 20 minutes, before they can dry out.
Why You’ll Love It
- Restaurant-tender chicken from a regular home oven.
- Crispy and creamy in every bite.
- Ready in about 35 minutes including the brine.
What to Serve With It
Garlic mashed potatoes, lemony orzo, roasted asparagus or a big Caesar salad.

Instructions
- Brine the chicken. Stir the salt and sugar into the lukewarm water until dissolved. Add the chicken and let it sit for 15 minutes (up to 30). Meanwhile, preheat the oven to 400°F (200°C).
- Butterfly or pound. Remove the chicken and pat it very dry. Slice each breast in half horizontally to make 2 thin cutlets, or pound to an even 1/2-inch thickness.
- Make the topping. Mix the sour cream, parmesan, garlic, lemon zest, thyme and pepper. In a separate bowl, toss the panko with the melted butter.
- Top the chicken. Arrange the chicken on a lined sheet pan. Spread the sour cream mixture over the top of each piece and sprinkle with the buttered panko.
- Bake. Bake for 18 to 22 minutes, until the crumbs are golden and the chicken reaches 165°F (74°C). If you want more color, broil for 1 to 2 minutes at the end.
- Rest. Rest the chicken for 5 minutes so the juices settle, then garnish with chives and serve.
Notes
- Don't skip patting the chicken dry after brining. Otherwise the topping slides off.
- No time to brine? Skip it and season the chicken with 1/2 teaspoon salt. It will still be tender thanks to the thin cut and topping.
- Swap sour cream for plain Greek yogurt for extra protein.

Frequently Asked Questions
Does brining really make a difference?
Yes. Even a short brine helps lean chicken breast hold on to moisture while it cooks, so it comes out noticeably juicier.
Why cut the breasts in half?
Thin cutlets cook fast and evenly at high heat, so they don't have time to dry out.
How is this different from classic melt-in-your-mouth chicken?
The classic version uses mayonnaise and bakes thick breasts at a lower temperature. This one adds a brine, thin cutlets, a tangy sour cream topping and a crunchy panko crust.
